Potato curry recipe
Potato Curry (Serves 4-6)
- 4-5 medium sized potatoes
- 2-3 teaspoons chilli powder
- 2 large onions sliced
- 2 tablespoons olive oil
- 2-3 slices of rampe/pandan leaves (available from Asian food shops, can be left out but better with!)
- 10 curry leaves
Place potatoes (skin still on) in water and boil for 15 minutes. You want the potatoes to be cooked through, but firm enough to cut into chunks. You can peel, chop and boil if it is easier.
Peel potatoes and chop into chunks (approx. ½ cm cubed). Sprinkle potatoes with chilli powder and salt
Warm oil on a medium heat. Add the rampe and curry leaves and fry for 1-2 minutes. Turn heat down and fry onions gently until they turn brown. This will take approx. 20-30mins.
Add the potatoes, and fry for a further 5 mins. Check seasoning, and add more salt/chilli powder, according to taste.
